Πράσινο Τσάι-Yunnan “Zhu Ye Qing”(25-100g)

Ένα πράσινο τσάι που μαζεύτηκε από την πρώτη σοδειά της άνοιξης, ψηλά στα βουνά του Simao.

Τα τρυφερά νεαρά μπουμπούκια υποβλήθηκαν σε επεξεργασία με τρόπο παρόμοιο με τον τρόπο επεξεργασίας άλλων ποικιλιών τσαγιού υψηλής ποιότητας (όπως το Emei Sichuan Zhu Ye Qing) αλλού στην Κίνα, αλλά επειδή προέρχεται από μια μεγάλη ποικιλία τσαγιού Yunnan (Camellia Sinensis var. Assamica), διατηρεί κάποια ξεχωριστά χαρακτηριστικά και μια πιο τολμηρή γεύση από μεγάλα φύλλα.

Αυτό το τσάι είναι πλούσιο σε τανίνες που του δίνουν ένα διεισδυτικό φυτικό άρωμα και μια έντονη γεύση Umami που καλύπτει το στόμα και το λαιμό.

Αυτά τα φύλλα παρασκευάζονται καλύτερα σε ένα διαφανές ποτήρι ή cha hai που δείχνει την τάση των φύλλων να ευθυγραμμίζονται κάθετα, μερικά να επιπλέουν στην επιφάνεια και άλλα να βυθίζονται στον πυθμένα.

This tea was picked from the first flush of spring harvest high in the mountains of Simao.

These tender young buds were processed in a way that is similar to how other premium small-leaf tea varietals (like Emei Sichuan Zhu Ye Qing) are processed elsewhere in China, but as this is from a large-leaf tea varietal of Yunnan (Camellia Sinensis var. Assamica), it retains some distinct characteristics and a bolder large-leaf taste.

This tea is high in tannins which give it a penetrating vegetal aroma and a strong Umami flavor which coats the mouth and throat.

These leaves are best brewed in a clear glass or cha hai which shows off the tendency of the leaves to line up vertically, some floating at the surface and others sinking to the bottom.
